We started with four cheese types in the family but more types of cheese are in the pipeline. A blue cheese went into maturing room for the time this autumn and we are keen to develop our own farmhouse cheese. We're slowly working towards giving our cheeses unique names rather than referring to them by the typical name for these cheese styles. We want acknowledge the special alchemy or provenance that is a combination of weather, soils, pasture, cows, farmer and cheese-maker.
