Halloumi is a crazy little cheese that defies description because how can the fact that something that is rubbery and squeaky when you bite into it be so appealing. Another odd-ball thing about it is that you lightly fry it before it’s served and it magically does not lose its shape. Halloumi is great as the protein portion of main meal or in a salad. It’s a favourite hot off the BBQ and handsome addition to a special breakfast. We make a plain halloumi as well as chilli and garlic versions for those people who like a bit of adventure.
