We started with four cheese types in the family but we've expanded the family and added lots of variants in five short years. We're a little crazy but big families are fun right?
Most of our cheese's names are unique to us but we do refer to the typical style for each cheese to acknowledge the origins of the recipes we use. We love the concept of 'terroir'. It talks about the special alchemy or provenance that is a combination of weather, soils, pasture, animal species, farmer, cultures and cheese-maker. All these factors come together to tell the story about each individual cheese and the name is like the title page of a good book.
